I've decided to start a Cooking for Assholes series of my own. My girlfriend and I cook a lot. Well, it's more her cooking and me just chopping shit to help speed the process along. We eat some fabulous stuff. I'd almost be more jealous of her cooking for someone else than would be sleeping with someone. (6)
The first in the series is a lovely Persian Chicken Salad. I'm not sure what about this is Persian, but apparently this is a common dish at Persian restaurants. It seems as white trash Americana as anything to me. Pluses about this dish: it's nutrient-dense, delicious, pretty affordable, very easy to make (100% of you assholes could make this), and is a great dish for making a lot of it to have leftovers for a few days. Con about this dish: it does take a bit of time to make it all come together but if you make a lot of it (which shouldn't really add too much to the overall prep time), you'll have a lot of food to last for several days. Something to keep in mind as you read this is that this is not a follow-to-the-tee type of recipe. Use common sense and add or subtract anything from it that you want and it'll still probably taste great. Let's begin. Step 1 Bake chicken on 350 degrees. If you want to make life a little easier on yourself, pick up one of those rotisserie chickens most grocery stores sell for $4-$6. You can use that in this recipe instead. Step 2 Boil a large pot of water. Add peeled potatoes and carrots. I would recommend about a 1.5 pounds of potatoes and 0.75 pounds of carrots per pound of chicken ratio, but as I mentioned, you can make it however you like. If you want it to taste different, change the ratios. The potatoes and carrots will need to boil for probably 20-30 minutes. When a fork can easily pierce through them, they're done. With about 15 minutes left in the boiling process, add eggs. We're going to be adding diced hard boiled eggs later. ![]() Yes, those purple things are potatoes. I like to grab a few different varietals from the market to diversify the nutrients, taste, and color you're getting from the dish a bit. Step 3 In a large serving bowl, add a huge glob of mayo and some diced pickles (we use dill). Making this meal is 90% chopping shit up so get used to that theme. ![]() Step 4 Dice the potatoes, carrots, and eggs. Add them to the bowl. ![]() Step 5 By now, the chicken should be done baking. Depending on how thick the cut of meat is, it will need to bake anywhere from 20-35 minutes. Cut it open to see if it looks done if you're not sure; you don't want to eat chicken that is not fully cooked. Step 6 Dice chicken and add to bowl. Mix and season with plenty of salt and pepper and anything else you care to put in. Serve on warm pita bread. ![]() Step 7 Enjoy. If it's not blowing you away, add more salt or pickles or anything else that you think will improve it. This is a really easy dish to make and very hard to fuck up since if it doesn't taste amazing to you, you can always just add more of something to help out with that. It's tasty (mayo and pickles ftw!), cheap (you should be able to feed two people for under $15 easily), and nutritious (plenty of protein from the chicken and eggs with a large amount of nutrient-dense vegetables). A lot of winning going on in this dish. |
